Chicken Piccata

Ingredients

  • 4 boneless chicken breasts, flattened
  • 1/4 cup flour
  • 1/2 stick butter, divided
  • 1 clove garlic clove minced
  • 1/2 cup white wine
  • 2 Tbs lemon juice
  • 1 chicken bouillon cube
  • 1 1/2 Tbs capers
  • 1 Tbs fresh parsley

Preparation

Step 1

Coat chicken with the flour. Melt 2T butter in a large non stick skillet over med-hi heat and cook chicken for 5 min on each side; remove and keep warm.

Melt remaining butter in the same skillet over med heat. Add the garlic and cook, stirring ,for 1 min. Add the wine, lemon juice and bouillon. Stir and cook 5 min, til sauce is slightly thickened; stir in capers. Serve sauce over chicken and sprinkle with parsley.

Serve over thin cooked pasta.
