Brunch Beef Strata

Ingredients

  • 1 1/2 lbs. ground beef
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 T olive oil
  • 4 oz. button mushrooms sliced
  • 1 c chopped onion
  • 1 tsp. thyme
  • 2 c milk
  • 5 large eggs
  • 8 c crust-less bread cubes
  • 2 c Asiago cheese (shredded)
  • 1 c cherry tomatoes (cut in half)Fresh basil

Preparation

Step 1

Heat oven to 350 degrees. Brown beef breaking into crumbles. Remove from skillet with slotted spoon. Season with salt and pepper. Set aside. Pour off drippings from pan.

Heat oil in same skillet until hot. Add mushrooms, and onion. Cook until tender. Return beef to skillet. Add thyme and cook until heated through stirring frequently. Remove from heat and set aside.

In large bowl, whisk eggs, milk. Season with salt and pepper.

Spray a 3 quart shallow baking dish. Layer half of bread cubes, 1/2 c cheese and half beef mixture in dish. Pour half of egg mixture over top. Top with remaining bread crumbs, 1/2 c. cheese, beef, and egg mixture. Sprinkle with remaining cheese. Cover with foil and refrigerate for 6 hours or overnight.

Bake strata covered 55 minutes. Remove foil and bake uncovered 10-15 or until puffed and lightly brown. Let stand 5 minutes and top with tomatoes and basil.
