Ingredients
- 3 pounds ground beef
- 3 tablespoons oil
- 2 large onions, finely chopped
- 1 green pepper, finely chopped
- 5 garlic cloves, minced
- 3 tablespoons ancho Chile powder
- 3 tablespoons regular Chile powder
- 3 tablespoons ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon sugar
- 2 teaspoons chopped thyme
- 2 teaspoons chopped oregano
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 3 cups beef broth
- 1 (15-ounce) can pinto beans, drained
- 1 (14-ounce) can diced fire roasted tomatoes with juices
- 1 Chipotle chili in adobo sauce, chopped
- 1 (15-ounce) can tomato sauce
- 1/4 cup tomato paste
- 1 tablespoon cider vinegar
- Salt, to taste

Step 1
Brown beef. Transfer with slotted spoon to a bowl.
Add onion and green peppers to pot. Cook until translucent.
Add garlic and all seasonings and hamburger. Cook for 10 minutes.
Stir in remaining ingredients except salt. Simmer over low heat for 1-1/2 hours. Add salt to taste.
