Peach Cobbler

Ingredients

  • 6 to 8 peaches, peeled and sliced
  • 2 1/2 Tbsp corn starch
  • 3/4 to 1 cup sugar
  • Crust
  • 1 cup flour
  • 2 egg yolks
  • 1/4 cup butter, melted
  • 1 tsp baking powder
  • 1 cup sugar
  • 2 egg whites, stiffly beaten

Preparation

Step 1

1. Preheat oven to 375" degrees.

2. Combine peaches, corn starch and sugar. Pour into 13 x 9 inch greased baking pan.

3. For crust, in mixing bowl combine flour, egg yolks, butter, baking powder and sugar. Gently fold egg whites into batter. Spread over peaches. Bake for 45 minutes or until the fruit is bubbling around edges and top is golden brown. Yield 12 servings.

***may want to make additional crust depending upon how much you like on your cobbler.
