WONTON SOUP

  • 8 oz ground pork
  • 2 –3 slices uncooked bacon, small dice
  • 1 Tbsp fresh ginger, minced or grated
  • 3 scallions, sliced
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp sriracha
  • 1 pack wonton wrappers
  • Broth:
  • 6 –8 cups chicken stock/broth
  • 1 Tbsp rice wine vinegar
  • 2 tsp sesame oil
  • 1/2 tsp sriracha
  • Scallions, sliced for garnish

Preparation:

To make the wontons, combine the pork, bacon, ginger, scallions, soy sauce, sesame oil, and sriracha in a medium mixing bowl.


Fill a small mixing bowl with water.


Take a wonton wrapper and place it on the table with one of the points facing you (like a diamond). Use your finger to wet all 4 edges. Using a spoon, place about 1 tsp of the pork mixture in the center of the wonton. Fold it in half, away from you, to make a triangle. Carefully seal the edges around the filling, being sure to squeeze the excess air out of the wrapper.


Wet the 2 points of the triangle on the long edge closest to you. Fold 1 side into the center, then fold the other side into the center, slightly overlapping in the center. Lay out the prepared wonton on a parchment-lined baking sheet.


Repeat the process until you have used all the filling.


To prepare the broth and serve, add the chicken stock, rice wine vinegar, sesame oil, and sriracha to a stockpot and bring to a boil. Once boiling, reduce the heat to a simmer and drop the wontons in one at a time. Simmer for 5–6 minutes until the wontons are cooked through.


Ladle the broth into bowls and place several of the cooked wontons into the dish. Garnish with the sliced scallions and serve.
