Ingredients
- 3/4 cup sugar
- 1/4 cup packed brown sugar
- 1 1/2 tsp cinnamon
- Beignets
- 2 cups of cake flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1 tsp salt
- 1 large egg
- 1 cup mashed bananas
- 1/2 cup whole milk
- 2 Tbsp canola oil
- Oil for frying
Preparation
Step 1
1. In small bowl mix sugars and cinnamon until combined. In large bowl whisk together: cake flour, sugar, baking powder, cinnamon and salt until combined. In another large bowl whisk together the egg, bananas, milk and oil. Combine dry ingredients into wet ingredients until moist.
2. Heat oil to 375' degrees. Drop tablespoonfuls of batter into oil. Fry for 45 to 60 seconds or until golden brown. Drain on paper towels. Roll warm beignets in sugar mixture. Yield about 3 dozen.
