Spatzle

Ingredients

  • 3 cups plain flour
  • 1/2 tsp salt
  • 2 eggs - beaten
  • 1 cup milk and water combined
  • 1 Tbsp sunflower oil
  • 2 Tbsp butter - melted plus
  • diced bacon

Preparation

Step 1

Sift flour and walt into bowl and make a well in the enter. Add eggs and enough of themilk and water to make a very soft dough.

Beat dough until it develops bubbles, then stir in oil and beat again.

Bring large pot of salted water to boil.

Dampen a chopping board with water and place dough on it. Shave off strips of dough into the water using broad side of a knife. (rinse knife with water occasionally so dough does not stick to it. The faster you work at this stage, the lighter the texture of the spatzle will be.)

Cook for 3 minutes, then remove with slotted spoon. Rinse quickly in hot water and put in a warmed serving bowl, cover to keep warm. Repeat until all dough has been used up.

Drizzle melted butter over top and serve immediate, topped with diced bacon.
