French Onion Soup

A delicious and hearty belly warming soup, great for a snowy day. Also makes the house smell wonderful. This is adapted from a Cooking Light recipe.

Ingredients

  • 2 teaspoons olive oil
  • 1 vertically sliced sweet onion
  • 1 vertically sliced red onion
  • 2 vertically sliced yellow onions
  • 1/2 teaspoon sugar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1/4 cup dry white wine
  • 10 to 12 cups beef broth (if you like lots of bread, add more broth)
  • 2 to 3 beef bouillon cubes
  • 1 teaspoon fresh thyme, chopped
  • 8 slices French bread, cut into cubes
  • 8 slices Provolone

Preparation

Step 1

Heat olive oil in a large pot over medium-high heat.

Add onions to pan; sauté for 5 to 10 minutes or until tender.

Stir in Sugar, Pepper, and Salt. Reduce heat to medium; cook 20 minutes, stirring frequently.

Increase heat to medium-high, and sauté for 5 minutes or until onion is golden brown.

Stir in wine, and cook for 1 minute.

Add broth, bouillon and thyme; bring to a boil.

Cover, reduce heat, and simmer 2 hours.

Preheat broiler. Place bread in a single layer on a baking sheet; broil 2 minutes or until toasted, turning after 1 minute

Put soup in a bowl, then add some of the dried bread. Top with a slice of cheese. If possible, put the bowl in the broiler for a couple of minutes until the cheese gets melty and brown.
