Mini Bailey's Chocolate Cheesecake

Ingredients

• 8 8 8 Chocolate Creme Oreos, crushed
• –press in bottom of jars or ramekins
• 8 8 8 oz. Cream Cheese, softened
• 1/3 1/3 1/3 C. Sugar
• 1 1 1 T. Cocoa Powder
• 4 4 4 oz. Bailey's
• 1 1 1 Egg
• I think I'll use three ramekins next time, as the servings were a bit large.

Preparation

Step 1

–Blend everything but the egg until smooth, add egg at the end to avoid over beating. Pour mixture over crushed cookies. Place on trivet, in Instant Pot, add 2 C. Water to pot. Loosely cover each serving with foil. Set to cook for 7 minutes. Let them set, with lid on for 15 minutes, allow pressure to release on its own. Chill before serving.
