Ingredients
- 1/2 cup Guiness
- 2 tbsp cooking oil
- 1/4 lb onions, large, sliced thin
- 1 clove garlic, minced
- 1 cup beef stock
- 1 1/2 lb beef sirloin, 1 1/2" cubes
- 1 tsp red wine vinegar
- 1 tsp dijon mustard
- 2 tsp brown sugar, packed
- 2 cloves, ground
- 1/4 tsp parsley
- 1/8 tsp thyme
- 1 bay leaf
- 1/4 tsp salt
- 1/4 tsp pepper
Preparation
Step 1
Coat beef in flour and brown in a large pan. Transfer to a heavy roasting pan.
Saute onion and garlic in the same pan as the beef. Add to reserved beef.
Combine remaining ingredients in a mixing bowl. Mix thoroughly. Add to beef in the roasting pan.
Cover the pan and place in preheated oven at 325°. Cook meat until tender for 1 1/2 to 2 hours.
