Swordfish with Shitake Mushrooms and Peppers

Ingredients
- 2 tbsp. olive oil
- 1 tbsp. chopped fresh thyme or 1/2 tsp. dried
- Salt/Pepper
- 2 medium red peppers
- 2 medium yellow peppers
- or
- Roasted red peppers, jarred
- 8 oz. shitake mushrooms
- 4 swordfish or mako shark steaks
- Thyme sprigs, for garnish

Preparation
Step 1
Prepare grille and oil. Combine oil, thyme and 1/4 tsp. each salt and pepper in medium bowl. Grille peppers, turning until evenly charred. Peel, seed and chop into 3/4" chunks. Grille mushrooms until tender. Halve mushrooms and toss in bowl with peppers in oil mixture. Grille fish. Serve with mushrooms and peppers and thyme as garnish.
