Swordfish with Shitake Mushrooms and Peppers

  • 2 tbsp. olive oil
  • 1 tbsp. chopped fresh thyme or 1/2 tsp. dried
  • Salt/Pepper
  • 2 medium red peppers
  • 2 medium yellow peppers
  • or
  • Roasted red peppers, jarred
  • 8 oz. shitake mushrooms
  • 4 swordfish or mako shark steaks
  • Thyme sprigs, for garnish



Step 1

Prepare grille and oil. Combine oil, thyme and 1/4 tsp. each salt and pepper in medium bowl. Grille peppers, turning until evenly charred. Peel, seed and chop into 3/4" chunks. Grille mushrooms until tender. Halve mushrooms and toss in bowl with peppers in oil mixture. Grille fish. Serve with mushrooms and peppers and thyme as garnish.
