Washington Cake

Washington cake is an early 19th century creamed cake (a variation of pound cake) flavored with spices and frequently raisins and dried currants. Recipe is from the Alexander Ramsey House - Minnesota Historical Society

Ingredients
- 3/4 cup butter
- 1 cup sugar
- 3 eggs
- 1/4 cup wine
- 2 1/2 to 3 cups sifted flour
- 1 tsp. baking soda
- 2 tsp. nutmeg
- 11/2 tsp. cinnamon
- 1/2 pint heavy cream
Preparation
Step 1
Cream the butter and sugar until light. Beat the eggs. Add the wine to the eggs. Combine this mix with the butter and sugar. Sift the flour, baking soda and spices together. Gradually add the flour mixture and the cream to the other ingredients, blending well after each addition.
Pour batter into a greased pan and bake at 350 degrees for 45 minutes.
