Pasta Salad

Ingredients

  • 8 oz cooked bowtie pasta
  • 1 -15 oz can chickpeas
  • 1 1/2 cups grape tomatoes, halved
  • 1 cup broccoli, cut into bite size pieces
  • 1/2 cup carrots, julienned
  • 1/2 cup red onion, julienned
  • 1/4 cup fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic, minsed
  • 1 tsp oregano
  • salt & pepper to taste

Preparation

Step 1

Cook pasta then set aside in a large bowl. Add chickpeas, tomatoes, broccoli, carrots, red onion and parsley.

In a measuring cup place olive oil, red wine vinegar, garlic, oregano, salt and pepper. Whisk until mixed well then drizzle over salad. Serve cold!
