Ingredients
- Chicken Broth 1 1/4 cup
- Lime Juice 3 tbsp.
- Soya Sauce 2 tbsp.
- Ginger 1 tbsp.
- Garlic 2 cloves minced
- Pepper 1/4 tsp
- 4 Boneless chicken Breast
- Brown Sugar 2 tbsp.
- Peanut Butter 2 tbsp.
- Sweet Chili Sauce 1 tbsp.
- Light Coconut Milk 1/2 cup
- 2 tsp cornstarch
Preparation
Step 1
1. Mix first 7 ingredients in a frying pan. Bring to boil. Reduce heat to medium
2. Cook chicken covered for 12-15 minutes until no longer pink. Transfer to plate
3. Whisk next three ingredients into broth until smooth. Bring to boil
4. Stir coconut milk into cornstarch in a small cup. Add to broth mixture. Stir until thick. Serve with chicken.
