Thai Coconut Chicken

Ingredients

  • Chicken Broth 1 1/4 cup
  • Lime Juice 3 tbsp.
  • Soya Sauce 2 tbsp.
  • Ginger 1 tbsp.
  • Garlic 2 cloves minced
  • Pepper 1/4 tsp
  • 4 Boneless chicken Breast
  • Brown Sugar 2 tbsp.
  • Peanut Butter 2 tbsp.
  • Sweet Chili Sauce 1 tbsp.
  • Light Coconut Milk 1/2 cup
  • 2 tsp cornstarch

Preparation

Step 1

1. Mix first 7 ingredients in a frying pan. Bring to boil. Reduce heat to medium
2. Cook chicken covered for 12-15 minutes until no longer pink. Transfer to plate
3. Whisk next three ingredients into broth until smooth. Bring to boil
4. Stir coconut milk into cornstarch in a small cup. Add to broth mixture. Stir until thick. Serve with chicken.
