Steel-cut oats are particularly fantastic. Unlike regular rolled oats, steel-cut oats are simply whole oat kernels that have been chopped into two or three pieces. They’re nuttier and chewier than regular oatmeal—really delicious. The bigger pieces make steel-cut oats
Here’s the best part: Steel-cut oats will basically cook themselves overnight. In the morning, you can just stir in your toppings and go. For extra credit, spike your oats with one of the Fast Metabolism-approved fruit-nut-spice combos below—they’re sure-fire fat-burners.
Makes 4 to 8 servings
Combine the oats and water in a large saucepan. Boil 1 minute. Turn off the heat, cover the pan and let it stand overnight at room temperature.
In the morning, remove the lid and bring the oats to a boil. Reduce heat and simmer, stirring often, until the oats are creamy yet still a little bit chewy, about 7 to 10 minutes.
Cooked oats will keep in the fridge for a week. You can just spoon out a serving (1 cup for Phase One or 1/2 cup for Phase Three), add a little water and reheat in the microwave for a minute or two. Or, you can make a huge batch and freeze single servings.
Then, add your favorite mix-ins (per 1 cup of oatmeal):
Add 1/2 cup chopped peaches, 1/2 teaspoon grated fresh ginger, and 1/4 teaspoon vanilla.
Phase Three add-in: 1/4 cup chopped almonds in addition.
Stir in 1/4 cup pumpkin puree, 1/4 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla, and stevia to taste.
Add 1/4 cup chopped hazelnuts and 1/4 teaspoon cinnamon, then top with 1/2 cup raspberries.

This is our “House Recipe” for oatmeal…can you alter it to make it appropriate for any of the Phases?
Yes, I know it sounds like a dessert. (And you don’t have to publish this, I’m just wondering if there’s a way to keep the cinnamon/vanilla combo and make it healthy?) Please reply.
I would think that vanilla extract, cinnamon & stevia would work based on the acceptable food lists in the book. Rice milk is also listed as okay for phase 1. Perhaps a bit added in the bowl, once cooked would give it some creaminess?
