Chocolate Zucchini Bread 0 Picture


  • 2 1/3 c flour
  • 2 c sugar
  • 1 t salt
  • 1 t ground cinnamon
  • 2 t baking soda
  • 1/4 t baking powder
  • 1/2 c unsweetened cocoa powder
  • 1/2 c chopped walnuts
  • 1/2 c choc chips
  • 3 eggs
  • 1 c oil
  • 2 t vanilla
  • 3 c unpeeled, grated zucchini



Step 1

preheat oven to 350 degrees. Lightly spray with nonstick cooking spray two 8x4 loan pans.

In a large bowl, combine flour, sugar, salt, cinnamon, baking soda, baking powder, cocoa, walnuts and choc chips.

In a medium bowl, whisk eggs slightly. Whisk in oil and vanilla. Stir in zucchini and add mixture to dry ingredients, mixing thoroughly.

Spoon batter into prepared loan pans. Bake in preheated oven until a toothpick inserted into the center comes out clean. 50 to 55 minutes.

Cool in pans on a rack for 10 minutes. Run a knife around the edges and removed bread from pans. When cool, wrap in aluminum foil to store.
