Shrimp Creole

Ingredients

  • 1 cup onion, chopped
  • 1 cup green pepper, chopped
  • 1 cup celery, sliced
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tsp salt
  • pepper to taste
  • 1 bay leaf
  • 16 oz. can diced tomatoes
  • 1 1/2 lbs. shrimp, peeled and cleaned
  • 3 to 4 cups prepared rice

Preparation

Step 1

Saute onion, green pepper, celery and garlic in butter in a skillet over medium heat until tender. Blend in flour; stir until golden. Add salt, pepper and bay leaf; stir in tomatoes until thick. Reduce heat to low; add shrimp and simmer, covered, for 10 minutes until shrimp are just pink, stirring occasionally. Discard bay leaf; serve over prepared rice.
