Pecan Meltaways

Ingredients

  • 1 C butter, softened
  • 1/2 C confectioners sugar
  • 1 tsp vanilla extract
  • 2 1/4 C all purpose flour
  • 1/4 tsp salt
  • 3/4 C finely chopped pecans
  • Additional confectioners sugar

Preparation

Step 1

In a mixing bowl, cream butter, sugar and vanilla; mix well.

Combine the flour and salt; add to the creamed mixture.

Stir in pecans.

Cover and chill for 1 hour or until firm. Roll into 1 inch balls and place on an ungreased baking sheets.

Bake at 350 degrees for 10 to 12 minutes, then roll in the extra confectioners sugar while still warm.

Cool; roll in sugar again.
