Ingredients
- 3/4 c. BBQ sauce
- 1/3 c. maple or pancake syrup
- 1/4 c. apple cider
- 2 tsp. chili powder
- 3/4 tsp. cinnamon
- 5 medium sweet potatoes, peeled & thinly sliced
- 1 small onion, thinly sliced
- 1 pork tenderloin (1 lb.)
Preparation
Step 1
Preheat oven to 425 degrees. Mix 1st 5 ingredients. Place potatoes in 13X9 baking dish; top with onions. Pour half of sauce mixture over vegetables.
Bake 15 min. Place meat on top & pour rest of sauce over top. Bake an additional 30 min or until meat is cooked through.
