Crock Pot Red Beans & Rice Soup *

Ingredients

  • 2 15oz cans small red beans
  • rinse and drained well
  • 3/4 cup brown rice regular
  • 1 medium onion finely chopped
  • 1 stalk celery finely chopped
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon ground cumin
  • 6 cups low sodium vegetable broth
  • 3-4 green onions chopped
  • 1 medium tomato chopped and drained

Preparation

Step 1

Mash one can of beans in the crock pot with a fork
combine remaining ingredients, except the green onions and tomatoes
and place in crock pot
cook on low 5 - 6 hours until rice is tender
sprinkle with green onions and chopped tomatoes
