Italian Herb Baked Meatballs

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup Italian seasoned bread crumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 small onion, diced
  • 1 egg lightly beaten
  • 2 T. Milk
  • 1 T. chopped fresh rosemary
  • 1 T. chopped fresh parsley
  • 1 T. chopped fresh basil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp. freshly ground pepper
  • 2 cloves of garlic
  • Olive oil for hands

Preparation

Step 1

Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

In a large bowl combine beef, bread crumbs, parmesan cheese, onion, egg, milk, herbs, salt, pepper and garlic. With clean hands gently mix until well blended. Be careful not to overmix or meatballs will be tough.

Using 2 T. scoop (or 1 T. scoop for appetizer and soup size meatballs) portion out meatballs and place on baking sheet. Lightly oil hands with olive oil to prevent meatballs from sticking then roll into balls. Bake 20-22 minutes until browned and cooked through.

Makes 18 meatballs.
