Ingredients
- 1 tsp EVOO
- 1 onion, chopped
- 1 lg Leek, white part only chopped
- 3 tbs flour
- 2 medium potatoes, peeled and sliced
- 4 c chicken stock
- 1 bunch fresh watercressed, chopped
- 1/4 tsp ground cumin
- 1/4 tsp ground oregano
- 1 c sliced mushrooms
- garlic powder, salt and pepper to taste
Preparation
Step 1
Saute onions and leeks until tender. Add stock, sliced potatoes, mushrooms and seasonings, simmer until potatoes are tender. Add watercress and simmer 10 minutes.
