Ingredients
- 1 TBSP Peanut Oil
- 1 large clove garlic mined
- 1 tsp grated fresh ginger
- 1 12 pkg green giant riced cauliflower
- 1 cup frozen mixed veg
- 2 TBSP soy sauce
- 1 egg slightly beaten and scrambled
Preparation
Step 1
Heat oil in non stick skillet and cook garlic and ginger over med heat for 1 minute
Add riced cauliflower and vegetables. Cook 5 minutes stirring frequently or until vegetables are tender crisp.
Stir in soy sauce and cook 1 minute
Stir in cooked egg and continue cooking 1 minute or until heated through
Note: You can also add cooked cubed chicken breast at the same time as you add rice and veggies to make a one dinner meal. (chicken does not add extra points)
