Ingredients
- 3 cups pineapple chunks, in 1 inch pieces (1 small or 1/2 large pineapple
- 1/4 cup fresh squeezed lime juice
- 1/2-1 Tbsp minced fresh mint
- 1/3 cup sugar
- 2 cups club soda, well chilled
- ice
- mint sprigs

Preparation
Step 1
1. Place the pineapple, lime juice, minced mint and sugar in a blender. Blend on high until the mix is frothy (30 sec-1 min)
2. Pour into a tall pitcher. Add the club soda and stir once or twice to mix. Pour into 6 sugar-dipped ice-filled glasses.
3. Garnish each with a mint sprig.
