Zucchini Manicotti

Ingredients

  • 1 1/2 cup ricotta
  • 1 cup parmesan
  • 1 lg egg, lightly beaten
  • 1 clove garlic, minced
  • dash of parsley and basil
  • salt
  • pepper
  • 4 medium zucchini, sliced (use peeler, should be thin)
  • marinara
  • 1 1/2 cup shredded mozzarella

Preparation

Step 1

-preheat oven to 350°
-in a bowl combine ricotta, parmesan, egg, garlic, parsley and basil. season with salt and pepper and mix until well combined
-Lay out 3 zucchini slices slightly overlapping. place a spoonful of ricotta mixture on top and roll.
-place rolled zucchini in a sauced dish
-pour marinara on top of zucchini, then sprinkle with parmesan cheese and mozzarella
-bake until tender and cheese has melted, about 30 min. broil. serve garnished with basil.
