Ingredients
- 8 baking potatoes, washed
- 3 T oil
- 2 sticks butter
- 1 c. bacon, fried and chopped
- 1 c. sour cream
- 1 c. Cheddar plus more for topping, shredded
- 1/2 c. milk
- 2 tsp seasoned salt
- 3 green onions, sliced
- Freshly ground black pepper
Preparation
Step 1
Preheat oven to 400. Place potatoes on baking sheet and rub them with oil and bake for 1 hour. Slice the butter into pats. Place in a large mixing bowl and add the bacon and sour cream. Remove the potatoes from oven and lower heat to 350. Cut each potato in half lengthwise, scrape out inside into bowl being careful not to tear the shell. Leave a small rim of potatoes intact for support. Smash the potatoes into the butter, bacon and sour cream mixture. Add the cheese, milk, seasoned salt, green onions and pepper to taste. Mix together well. (IMPORTANT: IF YOU PLAN TO FREEZE, DO NOT ADD THE GREEN ONIONS). Fill the potato shells to heaping, top with a little more grated cheese and bake for 15-20 minutes.
