Ingredients
- 1 cucumber
- 75 g feta cheese, drained
- 1 Tbsp fresh dill
- 1/2 tsp fresh ground pepper
- pomegranate seeds
Preparation
Step 1
1. Top, tail and peel the cucumber. Cut into 1/5cm-2cm thick slices to give about 16-18 in total. Using a melon baller, scoop out enough of the seeds from the middle to give a cup that has a border about 5 mm thick, making sure you don't go right down to the bottom. Set aside.
2. Break the feta cheese into a small bowl and mash it with a fork until it is as smooth as possible. Add the dill and season it with the pepper, stirring everything together well.
3. Divide the feta cheese mix into the cucumber cups. Arrange a little pile of pomegranate seeds on top of each one and serve.
