Really Yummy Cheese Sauce

This easy sauce can be poured over steamed veggies, mixed with pasta for Mac. & Cheese, poured over sliced potatoes for potatoes au gratin, or used as a base for a great Cheese Soup (with beer, or potatoes, or broccoli, the options are endless - just add more broth to the sauce to make a soup).

Ingredients

  • 2 oz. grated cheese (low-fat okay)
  • 1 c. boiling water
  • 2 chicken bullion cubes (or 2 t. chicken bullion powder)
  • 2 T. water
  • 4 t. corn starch
  • 1/2 t. worchestershire sauce
  • 1/2 t. prepared mustard
  • pepper to taste
  • 1/2 c. pureed sweet potatoes

Preparation

Step 1

Add bullion to boiling water - mix completely. Add cheese and melt completely while stirring - bring to boil. Remove from heat and stir in cornstarch smoothly dissolved in 2 T. water. Return to low heat until thickened. Remove from heat and add remaining ingredients . Mix until completely smooth (I sometimes mix together with an immersion blender to make sure it is totally smooth)and return to low heat to heat through.
