Berries and Coconut Whipped Cream

Ingredients

  • 1 can organic coconut milk, chilled
  • 1 cup organic frozen berries {blueberries, raspberries, blackberries}
  • Organic coconut chips, toasted

Preparation

Step 1

Separate the thick, white cream on top of the coconut milk. Place the cream in a mixer fitted with a whisk attachment. Beat on high speed for several minutes, until thick. Chilling will make it even thicker, so if you have time, prep this ahead of time! Store the clear coconut milk liquid in the fridge, saving it for blending smoothies.

Place berries in a bowl and top with a generous helping of whipped coconut milk. Garnish with toasted coconut chips. Enjoy!
