Sour Cream Mashed Potatoes

Ingredients

  • 2 lbs med. red potatoes, unpeeled, cut into 2" pieces
  • 2 tbsp butter
  • 3 scallions, thinly sliced, about 1/2 cup
  • 1/2 c sour cream
  • 1/2 c milk
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp chopped fresh chives or finely chopped scallion greens
  • Additional butter, at room temperature, optional

Preparation

Step 1

In lg pot, combine potatoes and enough salted water to cover. Over high heat, bring to boil; reduce heat to medium. Cook potatoes until tender, about 15 minutes. Drain.

In same pot, melt butter over medium heat; add scallions and cook, stirring frequently, until slightly softened, about 2 minutes. Remove from heat. Add drained potatoes, sour cream, milk, salt and pepper and mash with potato masher until smooth. Transfer to serving dish; sprinkle with chives. If desired, top with butter.
