Spinach Turban

Ingredients

  • 2 tablespoons (1/4 stick) unsalted butter
  • 1 large onion, minced
  • 1 bunch green onions including tops; chopped
  • 2 pounds spinach, thoroughly washed, well drained and chopped or 2 10-ounce package frozen chopped spinach, thawed and well drained.
  • 6 eggs, lightly beaten
  • 1/2 pound feta cheese, rinsed and crumbled
  • 8 ounces (1/2 pound) post cheese or lightly creamed cottage cheese
  • 2 tablespoons uncooked farina or 1/2 cup breadcrumbs
  • 1/2 cup chopped fresh parsley
  • 1/3 to 1/2 cup minced fresh dill-weed
  • Salt and freshly ground pepper
  • Freshly grated nutmeg
  • 1 pound phyllo pastry sheets
  • 1 . Pound unsalted butter, melted
  • 1 cup breadcrumbs
  • Minced fresh parsley (garnish)

Preparation

Step 1

Melt 2 tablespoons butter in large saucepan over medium heat. Add onions and sauté until transparent. Reduce heat to low, add spinach and cook.
