Ingredients
- 2 tablespoons (1/4 stick) unsalted butter
- 1 large onion, minced
- 1 bunch green onions including tops; chopped
- 2 pounds spinach, thoroughly washed, well drained and chopped or 2 10-ounce package frozen chopped spinach, thawed and well drained.
- 6 eggs, lightly beaten
- 1/2 pound feta cheese, rinsed and crumbled
- 8 ounces (1/2 pound) post cheese or lightly creamed cottage cheese
- 2 tablespoons uncooked farina or 1/2 cup breadcrumbs
- 1/2 cup chopped fresh parsley
- 1/3 to 1/2 cup minced fresh dill-weed
- Salt and freshly ground pepper
- Freshly grated nutmeg
- 1 pound phyllo pastry sheets
- 1 . Pound unsalted butter, melted
- 1 cup breadcrumbs
- Minced fresh parsley (garnish)
Preparation
Step 1
Melt 2 tablespoons butter in large saucepan over medium heat. Add onions and sauté until transparent. Reduce heat to low, add spinach and cook.
