Broccoli Soup (w/less fat)

Ingredients

  • 2 lbs frozen broccoli
  • 1 chopped onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 3 quarts stock

Preparation

Step 1

Heat oven to 425 degree F. On sheet pan, toss chopped onion, frozen broccoli, garlic and olive oil; roast 12 minutes in oven. Transfer to pot; add stock, bring to a boil; let simmer 2 minutes. Season, Puree.
