Zucchini Loaf (from Janie Awalt)

Makes 2 loaves. Preheat oven to 325°F.

Ingredients

  • 3 eggs
  • 1 cup veg. oil
  • 2 1/4 cups sugar
  • 1 Tbsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 2 cups grated zucchini (do not squeeze water out)
  • 1 cup chopped walnuts (optional)

Preparation

Step 1

Mix dry ingredients in large bowl. Mix wet ingredients together and add to dry. Add zucchini and walnuts. Mix well.

Grease 2 loaf pans. Divide mixture into 2 pans. Bake in 325°F oven for 40-60 minutes or until toothpick comes out clean.

Cool in pan 20 minutes, remove and cool on rack.
