Grilled Halibut With Peaches

Ingredients

  • 1 lb halibut
  • 3 peaches
  • 1/2 cup white wine
  • 1/2 ounce tarragon
  • 1 tsp black pepper (course grind)
  • 1/4 cup vegetable oil

Preparation

Step 1

Peal and half peaches. Blend one peach, either in a blender or food processor, with tarragon, white wine, and black pepper. Blend until smooth. Drizzle vegetable oil into the mixture while continuing to blend. Marinate halibut and remaining peaches in wine and peach mixture for 30 minutes at room temperature or 1 hour in the refrigerator. Grill on medium high for 5-6 min each side. Grill peaches on high just until Marked.
