Ingredients
- 2 cups pineapple chunks
- 1 tbsp minced red onion
- 1 juice of 1 lime
- 1/4 cup chopped fresh cilantro
- 4 (8 oz ) mahi mahi fillets
- 2 tsp sesame oil
- 4 tbsp white sesame seeds
- 1 tbsp vegetable oil
Preparation
Step 1
For pineapple salsa combine pineapple, red onion, lime juice, and cilantro in a medium bowl. Set aside. Rub each fillet with sesame oil and sprinkle with sesame seeds. Gently press seeds in with your fingers. In a large nonstick skillet heat vegetable oil over medium heat. Add fillets, seeded side down. Cook for 4 minutes. Gently flip fillets and cook 3 to 5 minutes more, or until fish flakes with a fork. Serve with pineapple salsa.
