Sausage Spaghetti Primavera

  • Ingredients
  • 4 TB olive oil
  • 1 pound sweet sausage
  • 2 dried chili peppers
  • 28 oz. can Italian peeled plum tomatoes drained and then chopped
  • 1 cup fresh Italian parsley chopped plus 3 tablespoons
  • 2 large GARLIC CLOVES
  • 3 bell red peppers roasted and peeled or a large jar of them - cut them into strips
  • 1 tsp oregano
  • salt and pepper
  • 3/4 pound spaghetti
  • 3 tbl freshly grated Parmesan


Preparation time 40mins
Cooking time 80mins


Step 1

Heat 2 tablespoons of oil on medium cook sausage around 20 min pricking them with a fork and turning til brown Take out of pan to later slice discard all oil but 1 tbl and add 2 tablespoons of oil increase heat to med-high add chili peppers and sauté til skins are black, take out and discard add tomatoes, parsley, and garlic and bring to simmer add red pepper, oregano and peppers salt and pepper cover and simmer 15 min watch carefully and stir occasionally to prevent burning boil water for spaghetti and cook ala dente thinly slice sausage and add back into skillet add spaghetti, mix all together in pan and sprinkle parley on top (3 tbl) and Parmesan pass extra cheese
