Pickled Cauliflower

Ingredients

  • 1/2 head of cauliflower, cut into small pieces
  • 12 carrots, peeled, remove head and tips, cut to fit into jar
  • 6 cloves garlic, peeled
  • 2 T mustard seeds
  • 4 T white sugar
  • 2 c white vinegar
  • 2 c water
  • 4 T salt
  • 1 T coriander
  • 2 T black peppercorns
  • 1/2 tsp red pepper flakes

Preparation

Step 1

1. Add 6 garlic cloves into the bottom of jar
2. Add carrots and cauliflower to fill the entire jar
3. Add mustard seeds into jar
4. Place water and vinegar into a saucepan and bring to a boil. Reduce to med. heat
5. Add sugar, salt, coriander, peppercorns and red pepper flakes. Heat until salt and sugar are dissolved
6. Turn off heat and cool to room temperature
7. Place mixture into jat
8. Place jar in refrigerator and let sit for 2 weeks. Shake once a day to ensure seasonings are distributed evenly.
9. DO NOT OPEN UNTIL READY. Open after two weeks to taste
10. Serve with sandwiches or eat as a quick snack.
