Mushroom Soup

Ingredients

  • 1 package dried mushrooms
  • 2 quart water
  • 1/4 lb butter
  • 1/2 onion
  • 1 carrot
  • 1/2 cup half and half
  • 1 tablespoon flour

Preparation

Step 1

1. Soak dried mushrooms in warm water for about 1 hour. Reserve liquid, straining through a cheesecloth. Wash any sand from the mushrooms and cut into narrow slices. Add mushrooms and strained liquid along with the butter and onion and carrot to the water. Cover and simmer for about a half hour. Combine the flour with the cream and thicken the stock. Serve over broad noodles.

2. This recipe is in a constant state of revision. I am now using a combination of dried mushrooms. I saute the onion and carrots in butter. I add more flour and more cream. It just keeps getting better and better.
