Ingredients
- 4 boneless skinless chicken breasts
- 1 14.5 oz can coconut milk
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 2 tsp curry powder
- 1/2 tsp ginger powder
- 1 cup brown rice
Preparation
Step 1
1. Place chicken breasts in a greased 4 qt slow cooker.
2. In a small bowl mix together coconut milk, salt, pepper, curry and ginger. Pour over the chicken in slow cooker.
3. Cook on high for 3 hours or on low for 6 hours. Stir in brown rice an hour before serving.
