Ingredients
- 2 8-oz packages cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 Tablespoon lemon juice
- 24 vanilla wafers
- 1 20-oz can cherry pie filling
Preparation
Step 1
Beat first 5 ingredients together until light and fluffy. Line each muffin cup with a paper baking cup containing a vanilla wafer, flat side down. Spoon in filling mixture, filling cups 2/3 full. Bake at 375 for 15-20 minutes. Cool. Remove paper and put a Tablespoon cherry pie filling on top of each cake. chill.
