Banana-Bread Macaroons

Ingredients

  • 2 medium bananas, very ripe, peeled and mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup raw honey
  • 1/2 tsp vanilla extract
  • 2 cups unsweetened shredded coconut
  • 1 Tbsp PLUS 1 tsp coconut flour, sifted
  • 1/2 tsp ground cinnamon
  • pinch salt

Preparation

Step 1

1. Preheat the oven to 350. Line two large baking sheets with parchment paper.

2. In a large bowl, whisk together the mashed bananas, coconut oil, honey, and vanilla. Stir in the remaining ingredients. Form into tightly packed, tablespoon size balls. Place on the prepared baking sheets.

3. Bake for about 20 minutes, or until the tops and edges are golden brown. Cool completely on the baking sheet (macaroons will set up as the cool). Store in an airtight container in the fridge or freezer.
