Ingredients

  • 1/4 teaspoon salt
  • 2 cups thinly sliced cucumber
  • 3/4 cup sliced green pepper
  • 1/2 cup sliced fresh mushrooms
  • 1/3 cup thinly sliced green onions
  • 2 medium tomatoes, cut in wedges
  • 3 Tablespoons white wine vinegar
  • 1 Tablespoon olive oil
  • 1 Tablespoon water
  • 1 clove garlic, minced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • Leaf lettuce

Preparation

Step 1

Sprinkle salt over cucumber; toss gently, and let stand 30 minutes. Drain cucumber slices, and press dry between paper towels. Combine cucumber, green pepper, and next 3 ingredients in a bowl; set aside.

Combine vinegar and next 6 ingredients in a small jar. Cover tightly and shake vigorously. Drizzle over vegetables; toss gently. Cover and chill 3 to 4 hours. Toss gently before servings, and arrange on lettuce leaves.
