Ingredients

  • 1/2 cup chopped red onion
  • 1 Tbsp cooking oil
  • 1/2 lb red potatoes, boiled (but not mushy) and cubed
  • 1 lb cooked corned beef, thickly sliced against the grain and broken into pieces
  • Paprika
  • 1/4 cup chopped parsley

1. In a large heavy skillet over medium heat, sauté red onion in cooking oil until onion begins to soften. Add red potatoes. Fry until edges begin to crisp. Add corned beef. Toss hash together over medium heat for 2 minutes.

2. Remove to a plate, sprinkle with paprika, and garnish with 1/4 cup chopped parsley.
