Ingredients

  • 2 medium chicken breasts
  • 2 tablespoons French or Italian dressing
  • 1/2 Cup cooked rice
  • 1/4 Cup shredded cheddar cheese
  • 1/4 Cup salsa
  • 1/4 Cup finely chopped red sweet pepper
  • 2 TBS finely chopped green sweet pepper
  • 2 TBS finely chopped onion
  • 2 TBS sour cream
  • 1 1/2 17 1/4 ounce package frozen puff pastry, thawed (3 sheets)
  • 1 egg, lightly beaten
  • 1 TBS water

Preparation

Step 1

1. In dish, marinate chicken in salad dressing for 30 min, room temp
2. preheat broiler for 5-10 min. Broil chicken 4-5 inches from heat. 12-15 minutes or until chicken is tender and no longer pink, turning half way.
3. Chop or shred chicken. Combine with Rice, Cheese, Salsa, Peppers, Sour cream, Onion
4. Preheat oven to 400. Place a sheet of puff pastry on a lightly floured surface. Roll to a 13" square. Cut 16 3" circles. Place mixture slightly off center. Brush edges with cold water. Fold over into half-moons. Pinch edges with finger or fork. Prick with fork.
5. Combine egg and 1 TBS water. Brush over empanadas.
6. Bake 12-15 minutes or until golden brown.
