Pork simmered in milk and herbs (pressure cooker)

Ingredients

  • 3 T olive oil
  • 1.5 lbs of tenderloin of pork cut into 1 1/2 inch cubes
  • 1 c milk
  • 2 cloves of minced garlic
  • 1/2 tsp of dried rosemary
  • 1 1/2 tsp of salt
  • 1/8 tsp of ground black pepper
  • 1 T minced parsley

Step 1

Heat olive oil in the pressure cooker over high heat. Add the pork and brown all sides. Add the milk, garlic, rosemary, salt, and black pepper. Position the lid and lock in place. Bring to high pressure. Adjust the heat to stabilize the pressure and cook 20 mins. Remove from the heat and lower the pressure using the cold-water-release method. Open the pressure cooker. Remove the pork with slotted spoon and place on a plate. Cover and keep warm.

Place the pressure cooker on the burner uncovered. Stirring frequently, reduce the sauce over high heat until almost completely reduced. Taste and adjust for salt and pepper. Sprinkle with parsley before serving.
