Ingredients

  • HORSERADISH CREAM:
  • 3 tbsp light sour cream
  • 1 tbsp prepared horseradish
  • 1 tbsp dijon mustard
  • 1 tbsp finely chopped fresh chives
  • Kosher salt and freshly cracked black pepper
  • SANDWICHES:
  • 8 oz whole wheat baguette, cut into 4 pieces
  • 8 oz thinly sliced lean roast beef
  • 1 cup watercress or baby arugula
  • 20 thin slices English Cucumbers (2oz)
  • Kosher salt and freshly cracked black pepper

Preparation

Step 1

HORSERADISH CREAM:
In small bowl, combine the sour cream, horseradish, mustard, and chives. Season with a pinch of salt and black pepper.

SANDWICHES:
Split each piece of baguette in half lengthwise and spread the horseradish cream onto the bread. Layer each sandwich with 2 oz roast beef, 1/4 c watercress, and 5 slices cucumber. Season each with a pinch each of salt and black pepper and serve.
