Southwestern Chicken

Ingredients

  • 2 lbs. Chicken (Boneless, skinless)
  • 1 packet taco seasoning1
  • 1 jar salsa (your choice, I use mild)
  • 1 can black beans (drained and rinsed)
  • 1 can corn (rinsed)
  • 1 can diced tomatoes

Preparation

Step 1

Place chicken, taco seasoning, and the salsa into a slow cooker in the order listed. Cook on high 6 to 8 hours, until chicken shreds when pulled with a fork. Remove chicken, shred, return to juice in slow cooker. Mix in the beans, corn, and tomatoes.

Cook for 30 more minutes or until heated through. Serve over rice, or on tortillas. Add cheese, sour cream or whatever toppings you enjoy.
