Cajun Turkey Meatloaf

We've been using this recipe for the past 15 years. We clipped it out of a local newspaper and make probably once a month during the winter. It makes great sandwiches the next day as leftovers.

Ingredients

  • 2 T butter or veg oil
  • 1 med onion diced
  • 1/2 sweet green pepper diced
  • 1 rib celery dcied
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1 bay leaf
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp hot pepper sauce
  • 1/4 cup milk
  • 1/3 cup ketchup
  • 1-1/2 lbs ground turkey
  • 1 cup bread crumbs
  • 1 egg slightly beaten

Preparation

Step 1

1) in large skillet, melt butter or heat oil over medium heat. Add onions and cook until softened
2) add green pepper, celery and garlic and cook until the pepper is soft. Stir in salt, pepper, cayenne pepper, thyme, cumin, bay leaf, Worcestershire and hot pepper sauce. Simmer for 5 minutes
3) Stir in milk and ketchup. Remove from heat and let cool. Remove bay leaf
4) In a large bowl combine onion mixture, bread crumbs, ground turkey and egg
5) Place in a loaf pan and bake in a preheated 350 degree oven for 1 hour and 15 minutes.
6) Drain off any juices and let stand 15 minutes before slicing. Serve with sour cream
