Grilled Salmon with Grilled Vegetables

Ingredients

  • 1 1/2 pounds salmon fillet
  • Oil of your choice
  • Salt and pepper, to taste
  • 1 zucchini, sliced
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 medium onion, cut into thin wedges
  • 1 cup fresh basil, finely chopped
  • 1 garlic clove, finely chopped
  • 8 Tbs olive oil

Preparation

Step 1

Preheat grill.
Rinse the salmon fillet and gently pat dry with paper towel.
Cut the fillet into desired service sizes.
Lightly brush the salmon with the oil of your choice.
Season with salt and pepper.
Grill the salmon about 3 minutes on one side before flipping it over.
Grill on the other side for 2 minutes.
The fish should flake easily when done.

While salmon is cooking, place vegetables in the middle of a piece of foil.
Mix the basil, garlic and olive oil.
Pour mixture over vegetables.
Grill the packet, seam side up, for about 5 minutes.

Serve the salmon over the vegetables.
