BOOZY RAINBOW JELLO PINWHEELS

Ingredients

  • 1 box jello (3 oz.)
  • 1/2 cup flavored vodka (I used whipped cream flavored)
  • 1 cup marshmallows
  • olive oil or cooking spray
  • 9 x9 inch square pan

Preparation

Step 1

Step 1: Add your jello to a medium sized microwaveable bowl. Add your 1/2 cup alcohol.

Step 2: Microwave for 40 seconds, just enough to dissolve the gelatin but not cook out the booze.

Step 3: Add your 1 cup marshmallows right away and toss them in the boozy jello liquid. Microwave them for another 20 seconds. DO NOT OVER HEAT THEM. If you over cook the marshmallows they won't do that really cool magic separating thing.

Step 4: Take the bowl out of the microwave and whisk the marshmallows right away until they all dissolve. (this should only take 30 seconds max to make sure they are all whisked in)

Step 5: Pour the liquid into a greased 9x9 inch pan and refrigerate for an hour.

Step 6: Run a knife around the rim of the set jello then carefully peel up one end and roll it towards the other end. (See the video) Pull out your rolls (should look like my second photo) and then cut half inch to one inch roll ups.
